So I can leave the server and the plants are going to stay there and they wont be removed, and I can come back the next day and continue growing the same weed plant that I planted yesterday.

Is this possible?

It is indeed, they are synced to the interior. So, as long as they don't get removed from the interior, they will be there for you to grow.
